Ingredients: Sea Salt, Cumin, Paprika, Onion, Garlic, Yellow Mustard, Black Pepper, Chillie, Thyme, Oreganum CHICKEN CAJUN CREAMY RECIPE – serves 2 people 2 skinless, boneless chicken breast halves 2 teaspoons Cajun seasoning 2 tablespoons butter or oil 1 red bell pepper, sliced 1 green bell pepper, sliced 1 green onion, chopped 6 mushrooms 1 cup heavy cream or Coconut cream (Make your own by mixing in Cape Dutch’s Coconut cream powder to water) 1/4 teaspoon dried or fresh Basil or coriander 1/4 teaspoon Pure Spice’s Lemon & Pepper OR Use fresh lemon 1/4 teaspoon sea salt 1/4 cup grated Parmesan cheese (Optional) HOW TO PREPARE: Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until almost tender (5 to 7 minutes). Add the red bell pepper, green bell pepper, mushrooms and onion. Sauté and stir for 2 to 3 minutes. Reduce heat. Add the cream / milk substitute, basil, lemon pepper and salt. Heat through. Serve it over any grain (Rice, Couscous, Millet, Bulgar wheat or your favorite Pasta). Sprinkle with grated Parmesan cheese and serve.
